4Very nice compliment for home-made french breadApr 15, 2010
I have purchased a number of items from "A Touch of Europe", including a variety of Laguiole knives. Although I wish the dollar were stronger against the French Franc (to reduce the price) I have to admit that I always felt I was getting a knife of reasonable quality, from Laguiole, at a fair price.

This item is a little more compact than bread knives designed for the U.S. market. This slight reduction in length and heft, in my opinion, makes this knife even more attractive for setting a table with bread, cheese and olives "aux provinces."

A Laguiole knife is very desireable, and worth the money, because it is always hand made (if it is a genuine Laguioule), and, like the regional wines of France, must past certain quality control standards by the Laguiole regional oversight authorities.

The handle on this knife is miminal, but, made of genuine olive wood. It is curved to fit the palm of your hand (assuming you hold the knife correctly) [You don't put your index finger on the top of the knife, you pinch it right where the hand joins the blade]. This is a wonderful compliment to a french bread cutting board that I purchased here on Amazon from England. Naturally Med - Olive Wood Bread Cutting Board. This is a special board for cutting French Bread.

Why do you need a special board? The answer is because if you make baguettes and french bread, properly, the crust will be very crispy, and, when you cut it, it will produce a lot of crumbs. This special board (which is an exceptional value and a wonderful enhancement to your table) has a slotted top so that the crumbs, when you cut your bread, will collect in the tray below the slots. (French bread crumbs are very useful in preparing many casual meals including salads and Catalan Tappas).

If you are looking for an easy introduction into French cooking, I highly recommend the WGBH PBS series from the 1970's: "The French Chef" with Julia Child. The French Chef: Julia Child 10-Disc Collection. This wonderfully recorded series not only provides her (relatively) easy to prepare specific recipes, it also gives you the basics of handling the foods necessary for preparing more sophisticated French cuisine as your culinary talents grow.
